There
are two types of asparagus plants
The
type that produce the spears we eat and the type that florists use in
arrangements called asparagus fern.
Edible
asparagus comes in three colors – green, purple and white.
The
green variety is the most common. Occasionally supermarkets carry the
purple variety.
White
asparagus, which is very popular in France, is rarely available in supermarkets.
It is grown underground to prevent sunlight from reaching the plants
so they can't produce chlorophyll, which gives asparagus its green color.
